- 1 cup whole wheat flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup coconut sugar (or any natural sweetener of your choice) or Monkfruit Sugar. ( I like this one!)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/4 cup plain Greek yogurt
- 1/4 cup almond milk (or any milk of your choice)
- 2 tablespoons coconut oil (melted)
- 1 teaspoon vanilla extract
- 2 eggs
Instructions:
1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
2. In a mixing bowl, whisk together the whole wheat flour, cocoa powder, coconut sugar, baking powder, baking soda, and salt.
3. In a separate bowl, combine the applesauce, Greek yogurt, almond milk, melted coconut oil, vanilla extract, and eggs. Mix well until everything is well combined.
4. Slowly add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
5. Spoon the batter into the cupcake liners, filling each one about 2/3 full.
6. Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
7. Remove from the oven and let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Greek Yogurt Frosting
Ingredients:
- 1 cup plain Greek yogurt
- 1/4 cup honey (or more to taste)
- 1/2 teaspoon vanilla extract
Instructions:
1. In a mixing bowl, combine the Greek yogurt, honey, and vanilla extract.
2. Mix together until well combined and smooth. Taste and adjust the sweetness by adding more honey if desired.
3. Once the cupcakes have cooled completely, frost them with the Greek yogurt frosting using a piping bag or a spatula.
Note: Greek yogurt frosting tends to be softer than traditional buttercream frosting, so it's best to refrigerate the cupcakes until serving to help the frosting set.
