About the Recipe

Ingredients

Ingredients:

- 2 cups almond flour

- 1/4 cup coconut flour

- 1/4 cup granulated keto-friendly sweetener (such as erythritol or stevia)

- 1 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/2 teaspoon ground cinnamon

- 1/4 teaspoon salt

- 1/4 cup unsweetened applesauce

- 2 tablespoons melted coconut oil

- 3 large eggs

- 1 teaspoon vanilla extract

- 1 medium apple, peeled and finely chopped

- 1/4 cup chopped walnuts or pecans (optional)


Instructions:

1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.


2. In a mixing bowl, combine the almond flour, coconut flour, sweetener, baking powder, baking soda, cinnamon, and salt. Mix well.


3. In a separate bowl, whisk together the applesauce, melted coconut oil, eggs, and vanilla extract until well combined.


4. Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms.


5. Gently fold in the chopped apple and chopped nuts (if using).


6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.


7. Bake for approximately 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.


8. Once baked, remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them onto a wire rack to cool completely.
