Ingredients:

- 1 cup rolled oats

- 1 cup egg whites (about 8 large egg whites)

- 1 cup fresh spinach, chopped

- 1/4 cup diced onions

- 1/4 cup diced bell peppers (any color you prefer)

- 1/4 cup grated cheese (optional)

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- Cooking spray or oil for greasing the muffin tin

Instructions:

1. Preheat your oven to 350°F (175°C) and lightly grease a standard muffin tin with cooking spray or oil.

2. In a large mixing bowl, combine the rolled oats, egg whites, chopped spinach, diced onions, diced bell peppers, grated cheese (if using), salt, and black pepper. Mix well until everything is evenly combined.

3. Pour the mixture evenly into the greased muffin tin, filling each cup about 3/4 full.

4. Bake for approximately 20-25 minutes or until the egg muffins are set and slightly golden on top. You can test for doneness by inserting a toothpick into the center of one muffin; if it comes out clean, they're ready!

5. Once baked, remove the muffin tin from the oven and let the muffins cool for a few minutes before removing them from the tin.

6. Serve these tasty Spinach and Oat Egg Muffins warm or at room temperature.
